Asian Chef#39;s Knife / Chopper - Handmade - Tao Nha by Authent

The Tao Nha is the classic Asian chef#39;s knife in the quot;smallquot; version. It can be used in many ways and is used for cutting and cutting meat and vegetables. The material to be cut can be easily picked up with the wide blade and lifted into the pan or wok. The high blade offers enough installation space for the fingers in the work process.

Blade length: 18 cm
Blade thickness: approx. 1 mm

Authentic Blades knives are traditionally handmade in small Vietnamese family businesses. They can continue a long tradition by working in the villages on their own farms and no family member is forced to follow the model of the migrant worker, which is otherwise widespread in Vietnam. When ordering, there are always down payments, so the families can buy material without bearing a financial risk. The knives are traded honestly fairly.

The blades are made of carbon steel, case-hardened, non-rust-free

The blades of the knives and scissors are made of carbon steel, not rustproof. The characteristics that these blades bring with them are: high sharpness and thus an excellent cutting behavior and they can be easily regrinded without much grinding knowledge or utensils, for example on any ceramic plate bottom or flower pot.

A few authentic words about the Authentics...
The knives are simple, simple, rather roughly processed in terms of details, handmade with simple tools. The blades are not forged but they are cut-out thin steels that are hardened in the cutting area. They are lightweight, and easy to keep sharp because the steel is not too hard, with about 59 HRC in the hardened area. Common for blades made of carbon steel is that they can rust and therefore need some care (dry). In addition, they discolor over time - they get patina - and this in turn protects somewhat against corrosion.

Now that all the imperfect has been said, which you can definitely love (learn) too: they cut like a sow, mainly through the very thinly ground blades. And with a bit of your own effort, you can easily get them on razor sharpness. The feedback of the last almost 10 years of market experience (i.e. real feedback from person to person at annually recurring Christmas and craft markets) shows enthusiastic customers who are happy to come back to the market stand every year and buy another model or just say thank you and at the same time make purchase recommendations to others who are currently present. Some love the originals with the black handles... Many also like the knives with the handles made by me because they are even better in the hand and due to hardwood and bonding also in terms of durability of the handle-blade connection are higher quality. Advantage of the originals: No glue - as far as the ecological aspect is concerned and cheaper. Advantage of my handles: higher durability due to glue and hardwood - also a point for the sustainable and again ecological aspect - you can see as you like.
Also a unique piece!! And an extra dose of love for the craft of mine.

Further interesting facts:

Attention: Please do not use for bones, large bones or frozen foods.

Care of the blade: Just pay attention to the following steps: Protect from constant moisture do not clean in the dishwasher, clean and dry with a damp cloth after use, oil from time to time, should the knife come into contact with acid (citrus fruits, onions, etc.) please clean afterwards with detergent.

Wooden handle: The riveted handle is made of cedar wood, which has been roasted (blackened) over fire. Therefore, the handles can stain a little at the beginning, but this gives itself after a short time. Every now and then, the wooden handle can be maintained with a little oil.
